High Protein Apple Crumble

Ingredients: Makes 6 servings
5-7 Apples
1/4 C Maple syrup
1/3 C Water
1/2 tsp Cinnamon
1/2 Lemon juice
2 tbsp Vanilla protein powder
6 C Plant based, high protein yogurt, I used vanilla bean flavor
Ingredients for crumble topping:
1 C Granola
1 C Dates, pitted
1/2 C Runny nut butter or granola butter
Directions:
- Preheat oven to 350F
- Peel your apples and slice them into 1/2” slices.
- In a 9×9 baking dish add your apples, cinnamon, protein powder, lemon juice and maple syrup. Mix well and then cover with tin foil. Bake for 30 minutes.
- While the apples are baking prepare the topping. In a food processor combine the dates and granola until it forms a crumbled texture. Using a spoon fold the nut/granola butter in until combined
- Spread the topping onto the apples and pat down. Bake uncovered for another 20 minutes.
- When you’re ready to serve add 1 C yogurt to the bowl!
