Piccata Meatballs

Ingredients:
1lb or ground chicken or turkey
1/2 tsp salt
1 tbsp lemon zest
1/2 tsp garlic powder
2 tbsp Olive oil
1 tbsp flour, all purpose gluten free
1 C Chicken broth
2 tbsp capers and 1 tsp caper brine
1/4 C lemon juice
2 cloves garlic sliced thin
Optional: 2 tbsp vegan butter-I made mine without it and it was great but typically
piccata includes butter so up to you!
Directions:
1. In a mixing bowl combine the ground chicken, salt, lemon zest and garlic powder. Roll into balls
2. Heat the olive in a skillet on medium-high. Add the meatballs and cook until each side is golden brown, about 6 minutes
3. Remove the meatballs from the pan and set aside.
(If using butter add the butter and garlic to the pan for one minute before step 4)
4. In the same pan add the broth, flour, lemon juice and capers. Whisk for about 5 minutes.
5. Return the meatballs to the pan and cover the skillet allow the meatballs to cook another 6 minutes. Stir and pour the sauce over the balls to make sure nothing is sticking.
7. Before serving taste the sauce to see if you would like more lemon or capers.
8. Serve with gluten free pasta, rice, mashed potatoes or cauliflower rice
