Easy Chicken Pitas

Ingredients:: Makes 4 servings
1lb Chicken breast, sliced
2 Bell peppers, julienne
1/4 tsp Salt
1/4 tsp black pepper
1 tsp Cumin
1 tsp Paprika
1 tsp garlic powder
2 tbsp Olive oil
1 tbsp honey

1 Cucumber, diced
1/ Pint cherry tomatoes, diced
1 tsp dill, fresh or dried
1 tbsp Olive oil
Salt + Pepper

Tatziki (trader joe’s sells a great vegan tatziki that’s dairy free)
Kalamata olives
Lemon wedges
Parsley
Feta cheese (optional)
Pita or Naan, 4 mini rounds or 2 large cut in half * Against the grain sell gluten free pita

Directions:

  1. Preheat oven to 350F. Line two baking sheets with tin foil.
  2. In a mixing bowl add the chicken, 1 tbsp Olive oil and spices (salt, pepper, cumin, paprika & garlic powder) Mix well and spread the chicken on the first baking sheet.
  3. On the second sheet pan add the sliced peppers and 1 tbsp Olive oil. Mix well and pop both trays into the oven for 20 minutes.
  4. While the trays are baking prepare your cucumber and tomato salad by mixing the diced veggies with olive oil, dill, salt & pepper.
  5. When the chicken is ready add it to a pan with 1 tbsp honey and cook on high for 5 minutes until the chicken is browned. (this step is optional but does make the dish more appetizing)
  6. Plate your naan, chicken, peppers, cucumber salad, tatziki and top with olives, fresh parsley, a lemon wedge and feta cheese.
