Easy Chicken Pitas

Ingredients:: Makes 4 servings
1lb Chicken breast, sliced
2 Bell peppers, julienne
1/4 tsp Salt
1/4 tsp black pepper
1 tsp Cumin
1 tsp Paprika
1 tsp garlic powder
2 tbsp Olive oil
1 tbsp honey

1 Cucumber, diced
1/ Pint cherry tomatoes, diced
1 tsp dill, fresh or dried
1 tbsp Olive oil
Salt + Pepper

Tatziki (trader joe’s sells a great vegan tatziki that’s dairy free)
Kalamata olives
Lemon wedges
Parsley
Feta cheese (optional)
Pita or Naan, 4 mini rounds or 2 large cut in half * Against the grain sell gluten free pita

Directions:
- Preheat oven to 350F. Line two baking sheets with tin foil.
- In a mixing bowl add the chicken, 1 tbsp Olive oil and spices (salt, pepper, cumin, paprika & garlic powder) Mix well and spread the chicken on the first baking sheet.
- On the second sheet pan add the sliced peppers and 1 tbsp Olive oil. Mix well and pop both trays into the oven for 20 minutes.
- While the trays are baking prepare your cucumber and tomato salad by mixing the diced veggies with olive oil, dill, salt & pepper.
- When the chicken is ready add it to a pan with 1 tbsp honey and cook on high for 5 minutes until the chicken is browned. (this step is optional but does make the dish more appetizing)
- Plate your naan, chicken, peppers, cucumber salad, tatziki and top with olives, fresh parsley, a lemon wedge and feta cheese.
