High Protein Thai Quinoa Salad

Ingredients: Makes 4 servings

4 C Chicken, diced

1 C Shredded carrots

1/2 C Fresh cilantro, diced

1 Red bell pepper, diced

2 C Red cabbage

3/4 C Quinoa, cooked

1/4 C Green onions, sliced

Dressing Ingredients:

2 tsp fresh ginger, grated

1 lime, juice

1 tbsp honey

1/4 C nut butter or granola butter

1 tsp Olive oil or sesame oil

1 tbsp Rice wine vinegar

1 tsp Sesame oil

3 tbsp soy sauce or tamari

Directions:

1. Prepare your dressing first by combing in all the ingredients in a food processor.

2. Add all the salad ingredients to a large bowl and mix well. Serve with dressing on the side

*For meal prep leave the chicken separate from the salad to ensure you portion out the correct amount of protein
