Blueberry Quinoa Breakfast Bake

•Dairy free, Gluten free, Can be made egg free, nut free, sesame free, Top 9 allergy friendly

Ingredients: Makes 6 servings
2 C Blueberries
1 C Quinoa
2 C Milk, I used oatmilk
1 tbsp Cinnamon
2 tbsp Maple syrup
2 eggs or 2 flax eggs
1 tsp vanilla extract
*optional: 1 scoop protein or serve with high protein yogurt

Directions:
1. Preheat oven to 375F
2. Using a 9×9 pan pour the blueberries and quinoa into the pan to make an even layer
3. Pour the cinnamon, syrup, vanilla and milk into the pan. Whisk the eggs and them as well. Mix everything together.
4. Bake for 60-75 minutes until the center is not longer liquid

  1. Tried the blueberry quinoa breakfast bake. The quinoa was hard and crunchy on top. Is that normal? I expected the milk to soften it up.
