One Pot Marry Me Chicken & Rice

Ingredients: Makes 4 servings, 43g protein per serving

1lb chicken breast, cubed

1 tbsp oil from sundried tomato jar

1/4 C sundried tomatoes

2 cloves garlic

2 tsp salt

1 tsp italian seasoning

1/2 tsp onion powder

1 tbsp tomato paste

3 C low sodium chicken broth

3/4 C coconut milk OR more broth *I used more broth in the video and pictures shown

1 1/4 C basmati rice

2 C fresh spinach

1/2 C fresh basil

Directions:

  1. In a large pot heat the oil and add the chicken. Cook the chicken until it browns about 8 minutes
  2. Add all the seasonings, tomato paste , garlic and sundried tomatoes. Mix well
  3. Add the broth and coconut milk(or extra broth) and the rice. Bring to a boil and then reduce to a simmer and cover
  4. Stir the pot every 5 minutes until the rice is cooked and the liquid has evaporated to avoid the rice sticking
  5. Mix in the spinach and basil. Taste test for extra salt and serve!
