Breakfast Meatballs & Cranberry Quinoa Salad

Ingredients for meatballs:

1lb Ground turkey

1 Sweet potato, peeled and shredded

1 Large apple, peeled and shredded

1 Celery rib, diced

1/2 Yellow onion, diced

1 1/2 tsp Salt

Pinch of black pepper

1 tsp Dried oregano

1 tsp Dried thyme

1 tbsp Olive oil

Ingredients for Salad:

2 C Cooked Quinoa

1 Large handful of fresh spinach (about 1 C)

3/4 C Dried cranberries

1/2 C Pumpkin seeds, roasted, not salted

2 Mandarin oranges, peels and segmented

4 tbsp Orange juice

1 C Edamame, cooked and shelled

2 tbsp Olive oil

Pinch of salt

Directions for Meatballs:

1. Preheat oven to 400F. Line a baking sheet with parchment paper and drizzle olive oil on the sheet.

2. In a large mixing bowl combine the turkey, vegetables and seasoning. Mix until well incorporated. Roll the turkey into balls about 12.

3. Place the balls on the baking sheet 1-2” apart. Bake for 20 minutes.

Directions for salad:

1. Mix all the ingredients and keep refrigerated. As it sits overnight the mix will become marinated and even more tasty! (Can be refrigerated up to 4 days)
