‘PB’&J Baked Quinoa (Nut Free)

*This recipe is top 9 allergen free and I included substitutes in the recipe to fit your needs
*I use Granola butter instead of peanut butter and it tastes amazing!!!
Ingredients: Makes 9 servings
1 C strawberries, smashed
2 ripe bananas, smashed
2 tbsp honey or maple syrup
3 tbsp granola butter or “nut” butter of your choice
1 tsp vanilla extract
1 tbsp ground flaxseed or 1 egg or 1/3 C applesauce
1 1/2 tsp baking powder
1 C Quinoa, cooked
1 1/2 C Rolled oats, I use Trader Joe’s gluten free
1 C milk, I use Pacific brand oat milk it doesn’t have any oils *for extra protein you can also use Owyn vanilla protein shake in place of milk
*If you want to add protein to this you can add 1 scoop of protein
Directions:
1. Preheat oven to 350F.
2. Smash the fruit into the base of a 9×9 pan.
3. Add the honey, granola butter, vanilla, flax/egg/applesauce and milk. Mix until combined. Be sure to break up the granola butter so it spreads out
4. Add the quinoa, oats and baking powder. Mix well.
5. Bake for 35 minutes or until the oats are fully cooked and a toothpick comes out clean
6. Allow to fully cool before cutting. Store in the refrigerator for up to 4 days.
