Equipment
- 1 Large mixing bowl
- 1 Small mixing bowl
Ingredients
For the bowl
- 1/2 C Shelled pistachios
- 1 Ripe avocado, diced
- 1 C Cooked quinoa
- 1 C English cucumber diced
- 1 C Shelled, cooked edamame or peas
- 1/2 C Cauliflower rice, cooked
- 1 tbsp Hemp hearts
- 2 tbsp Pumpkin seeds
- 2 tbsp Fresh, minced mint leaves
For the Citrus Dressing
- 3 tbsp Tamari or coconut aminos
- 2 tbsp Orange juice
- 1 tbsp Lemon juice
- 1 1/2 tbsp Olive oil
- 1 tsp Sesame oil
- 1-2 tsp Honey
- 1 tsp Fresh grated ginger
Instructions
- In a bowl combine all the salad ingredients
- In a small bowl whisk together the dressing ingredients
- When ready to serve pour the dressing over the salad, mix well and serve! Also, leftovers hold up well so you can also use it as a meal prep salad
