Equipment

  • 1 Large mixing bowl
  • 1 Small mixing bowl

Ingredients

For the bowl

  • 1/2 C Shelled pistachios
  • 1 Ripe avocado, diced
  • 1 C Cooked quinoa
  • 1 C English cucumber diced
  • 1 C Shelled, cooked edamame or peas
  • 1/2 C Cauliflower rice, cooked
  • 1 tbsp Hemp hearts
  • 2 tbsp Pumpkin seeds
  • 2 tbsp Fresh, minced mint leaves

For the Citrus Dressing

  • 3 tbsp Tamari or coconut aminos
  • 2 tbsp Orange juice
  • 1 tbsp Lemon juice
  • 1 1/2 tbsp Olive oil
  • 1 tsp Sesame oil
  • 1-2 tsp Honey
  • 1 tsp Fresh grated ginger

Instructions

  • In a bowl combine all the salad ingredients
  • In a small bowl whisk together the dressing ingredients
  • When ready to serve pour the dressing over the salad, mix well and serve! Also, leftovers hold up well so you can also use it as a meal prep salad
