Protein ‘Ice Cream’ Bark

- You can use homemade or store bought dairy free ice cream. I included my recipe for homemade
Homemade salted caramel protein ice cream: I used a Ninja Creami
2 frozen bananas
1/2 C full-fat coconut milk
1 scoop vanilla protein powder
1/4 tsp salt
1 tsp vanilla extract
For salted caramel swirl:
2 tbsp granola butter, sunbutter or almond butter
2 tbsp pure maple syrup or date syrup
1 tbsp coconut oil (melted)
pinch of sea salt
Directions:
- In a small bow whisk together the caramel swirl ingredients and set aside
- In a blender combine the bananas, coconut milk, protein powder, salt and vanilla until thick and creamy.
- In a container layer the ice cream and drizzle the caramel between the layers. Gently swirl the ice cream with a knife to make a marbled look
- Use immediately or freeze for later
Ingredients for the bark: Makes 4 servings
1 C melted dark chocolate, dairy free
3-4 ice cream cones, I used a dairy and gluten free cone I found at wholefoods, they also carry them at sprouts
Strawberries or fruit of your choice
Gluten free mini pretzels
Mini dark chocolate chips, dairy free
Sprinkles (optional)
To make the bark:
- Find a sheet pan that will fit in your freeze and line it with parchment paper
- Pour half the melted chocolate onto the pan and spread it out. Layer the ice cream on top. Add your toppings. Pour the remaining chocolate over the top and freeze 2-3 hours until solid. When ready to serve use a large butches knife to cut the bark into pieces.
