Pre heat oven to 425F
Add your diced potatoes, olive oil, salt and pepper to the 9×13 pan and mix until the potatoes are coated
Bake for 25-35 minutes until lightly browned
While the potatoes are cooking slice your peppers
When the potatoes are done remove them from the oven and add the pepper rings on top. Crack an egg into each ring. Sprinkle salt and pepper on the eggs. Bake for another 15-20 minutes for jammy eggs. (less if you want them to be runny)
Optional: Sprinkle fresh herbs on top before serving
*Serve the breakfast bake with turkey sausage for added protein or extra egg whites. One serving prepared as directed is 21g of protein ideal for breakfast is 25-30g.
