Single Serve Protein Blueberry Crumble

Ingredients:
1 C Blueberries
1/2 tsp cornstarch
1/3 C Oats (gluten free)
1 scoop protein powder-I use rice or pea protein
1/2 tsp cinnamon
1/2 tsp maple syrup or honey
2 tbsp water
Pinch of salt
Directions:
1. In a microwave safe bowl add the blueberries and squash them with a fork. Then add the cornstarch and mix well. Microwave for 1 minute
2. In a second bowl mix the oats, protein powder, cinnamon, maple syrup, salt and water (make sure the water is added last) Mix until it forms a crumbly texture. The oats should look wet but you don’t want any excess fluid. You can add more water if you need it.
3. Pour the oats mixture on top of the blueberries and microwave for 1 minute. Let cool for a few minutes before eating

What amount is 1 scoop of protein powder? 1 Tbsp?
The amount is different for every brand. 1 scoop of a concentrated powder might only be a tbsp but a less concentrated might be 1/4 C. Protein powders vary in grams of protein. Usually 20-30g per serving. By saying 2 scoops the idea is you will have at the least 40g of protein in the dish. So that’s why I can’t say tablespoon etc because it’s not accurate for every protein powder

I have made this several times. I have made it with just blueberries and also with a mix of blueberries and raspberries. Each time this is so good. I even have it for breakfast sometimes and I add a tablespoon of ground flaxseed to the topping to add more fiber. Will definitely continue to make this and I have even shared the recipe with friends.
