Sun-dried tomato & Basil Turkey Meatballs

Ingredients: Makes 4 servings
1lb ground turkey
1/3 C Sun-dried tomatoes, julienne in oil
1/4 C finely diced onion (omit if you or your children don’t like onion)
1/4 C basil, diced
1-2 cloves garlic, minced
3/4 tsp salt
1/2 tsp pepper
2-3 C marinara sauce (I use Rao’s)
2-3 tbsp olive oil
*I made sautéed zucchini as a side dish. You could use pasta, rice, broccoli, whatever you like! You could also put these in a roll to make a meatball sandwich
Directions:
1. Preheat oven to 425F. Line a baking sheet with parchment paper
2. In a mixing bowl combine the turkey, sun-dried tomatoes, onion, garlic, basil, salt and pepper.
3. Roll the mixture into 12 balls. Sprinkle olive oil over the meat balls and roll them so they’re coated
4. Bake for 20 minutes or until internal temperature reaches 165F
5. When the meatballs are ready heat the marinara sauce in a pan. Add the meatballs and bring the pot to a simmer to heat the sauce. Serve with your side dish
