Thai Inspired Chicken Salad Meal Prep• High Protein

Ingredients: Makes 4 jars
4 C diced chicken breast
1 C Carrots
2 C Cabbage
1 C Red bell pepper, diced
1/4 C chopped cilantro
1 C Crispy roasted chickpeas
2 C Cooked quinoa
Dressing: 1-2 tbsp per jar
2 tsp fresh ginger paste or grated
1 clove garlic
2 tbsp nut butter or granola butter for nut free*
1 tbsp rice wine vinegar
2 tbsp soy sauce or tamari for gluten free
1 tbsp honey
Crisp chickpeas: You can use premade or use this recipe
1 C chickpeas, rinsed and pat dry
1 tbsp Olive oil or avocado oil
1 tsp chili powder
1 tsp salt
*Roast in the oven at 350F for 25-30 minutes until crispy
Directions:
1. To make the dressing add all the ingredients to a food processor or blender and blend until smooth
2. To assemble the jars divide your ingredients into 4. Layer with the chicken or quinoa and the dressing on the bottom of the jar. Put the chickpeas in last so they stay crispy.
*Refrigerate up to 4 days
**Each jar packs 45g of protein!!
