Crispy Baked Tacos

*There is both a beef taco recipe and a vegetarian version as well please read carefully.
Ingredients for Beef taco: Makes about 8 tacos
1lb ground beef
8 tortillas (I use la familia brand
2 large sweet potatoes or 1 1/2 C refried beans
Vegan cheddar cheese
Olive oil
Taco seasoning (homemade option below)
**If you need to hide the veggies even more diced onion and zucchini and cook it with the meat. Diced small enough and the kids won’t even notice! Mushrooms also work but will change the taste
•optional toppings: lettuce, tomatoes, guacamole, sour cream (they do make vegan options), salsa
*I made an avocado cilantro lime ‘cream’
Ingredients:
1 large avocado
1 C fresh cilantro
1 tsp white white vinegar
1 tbsp honey or agave
1 clove garlic
2 tbsp lime juice
1/8 tsp salt
3 tbsp olive oil
Ingredients for vegetarian taco:
2 Large sweet potatoes
4 C Black beans, pre seasoned pouch or canned
8 tortillas
Vegan cheese
Olive oil
Taco seasoning
Directions for beef taco:
*Preheat oven to 425F*
1. After washing your potatoes poke holes in them with a fork. Microwave them on high for 4 minutes. Turn them over and add another 2 minutes and more time as needed until they’re tender and a fork slips in and out easily.
2. In a skillet brown the meat. And season with taco seasoning mixed with 2 tbsp of water. Cook until all the water has evaporated and set aside
3. Line two baking sheets with parchment paper and drizzle olive oil until the entire surface is coated. Place a tortilla on the sheet pan.
4.Using a fork spread about 1 heaping tablespoon of sweet potato on one half of the tortilla. Layer with 2-3 tbsp of meat and top with vegan cheese.
5. Fold the taco with the cheese side down. We want the sweet potato side on top because it’s heavy and keeps the shape of the taco.
6. Repeat until all the tacos are filled. Bake for 10-12 minutes until the tacos are crunchy and golden.
**For vegetarian tacos repeat the same process substituting the black beans for beef. If they’re pre-seasoned no need to add tacos seasoning. If they aren’t seasoned: drain the fluid from the can. Heat the beans in a skillet and add the taco seasoning without water. Mix well and cook for 4-5 minutes.
