The BEST vegan blueberry muffins

This picture doesn’t do these muffins any justice. I was trying to come up with a muffin recipe my son would like and hit the jackpot. For that reason I wasn’t worried about what they looked like so the picture is blah but the taste is phenomenal! Must eat warm!

Ingredients:
2 C fresh blueberries
1 C milk, i used oat milk
2 C flour, I used all purpose (GF all purpose works as well)
2 tsp baking powder
3/4 C granulated sugar
1/4 tsp salt
1 tsp vanilla
1/3 C fill half way with applesauce and half way with oil (avocado or olive oil)

Optional topping:

1/8 tsp C brown sugar
1/2 tsp cinnamon

Directions:
1. Preheat oven to 350F.
2. Mix all the dry muffin ingredients in a mixing bowl. Add the wet ingredients, mix until combined but not overly smooth. Then fold in the blueberries
3. Pour about 1/4 C of batter into each muffin tin and then sprinkle the cinnamon sugar topping on each one. Bake for 25 minutes
