Pumpkin Spice Cinnamon Roll Protein Pancake

Ingredients: makes 5

2 C pancake mix

2 scoops protein powder of your choice

1/2 C yogurt of your choice, I like cocojune

2 eggs

1 C pumpkin puree

1/2 milk of your choice

1 tsp vanilla extract

2-3 tsp pumpkin pie spice

Optional-2 tsp pure maple syrup for sweetness

Swirl: Date syrup

Glaze: 3 tbsp powdered sugar + 1-2 tsp maple syrup mixed

Directions:

  1. Preheat oven to 350F. Grease your baking dish or dishes. I use separate baking bowls for meal prep
  2. In a mixing bowl combine the pancake mix, protein and pumpkin pie spice. In a second bowl combine the eggs, milk, yogurt, pumpkin puree, vanilla and maple syrup if using.
  3. Pour the wet ingredients into the bowl with the dry ingredients. Mix well
  4. Divide the mixture into 5 bowls or into 1 8×8 pan.
  5. Drizzle the date syrup on top in a swirl pattern
  6. Bake 25-30 min or until the center is cooked. Use a tooth pick to check
  7. Drizzle with the glaze when ready to eat
