Pumpkin Spice Cinnamon Roll Protein Pancake

Ingredients: makes 5
2 C pancake mix
2 scoops protein powder of your choice
1/2 C yogurt of your choice, I like cocojune
2 eggs
1 C pumpkin puree
1/2 milk of your choice
1 tsp vanilla extract
2-3 tsp pumpkin pie spice
Optional-2 tsp pure maple syrup for sweetness
Swirl: Date syrup
Glaze: 3 tbsp powdered sugar + 1-2 tsp maple syrup mixed
Directions:
- Preheat oven to 350F. Grease your baking dish or dishes. I use separate baking bowls for meal prep
- In a mixing bowl combine the pancake mix, protein and pumpkin pie spice. In a second bowl combine the eggs, milk, yogurt, pumpkin puree, vanilla and maple syrup if using.
- Pour the wet ingredients into the bowl with the dry ingredients. Mix well
- Divide the mixture into 5 bowls or into 1 8×8 pan.
- Drizzle the date syrup on top in a swirl pattern
- Bake 25-30 min or until the center is cooked. Use a tooth pick to check
- Drizzle with the glaze when ready to eat
