Equipment

  • 1 microwave safe dish
  • 1 skillet
  • 1 small jar or mixing bowl

Ingredients

Mashed sweet potato

  • 4 small Sweet potatoes

Beef

  • 1 lb ground beef or sirloin, grass-fed

Vegetable mix

  • 1 red bell pepper, chopped finely
  • 3 C Dino kale, chopped finely
  • 3 cloves garlic, minced or grated
  • 1 tbsp fresh grated ginger
  • 1/4 C coconut aminos or gluten-free tamari
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 2 Scallions, sliced thin and more for serving

Finishing sauce

  • 1 tbsp coconut aminos or gluten-free tamari
  • 1 tbsp fresh lime juice
  • 1 tsp honey
  • 1 tsp fresh ginger

Instructions

  • Wash the pat dry the potatoes. Polk them with holes using a fork and microwave on high for about 10 minutes until completely cooked through. When done allow them to sit and cool.
  • In a skillet, cook the beef for 5 minutes, breaking it into small pieces. Once cooked set aside.
  • In the same pan add the garlic and ginger and stir for 30 seconds
  • Add the coconut aminos, vinegar, honey and honey. Stir and then add the kale and peppers. Cooking for about 5 minutes until the vegetables have softened
  • Return the beef to the pan. Pour the finishing sauce on top and allow to simmer for about 3 minutes, stirring often
  • Remove the skin from the potatoes. Put the potato flesh in a blender with a splash of water to whip them quickly. *make sure the potatoes have cooled otherwise steam will build in the blender and when you remove the top the hot potatoes can pop towards your face. Don't want anyone to be burned!
  • Plate with the mashed potato on the bottom and beef mixture layered on top. I added a little extra green onion on top as well
