2 Minute Banana Bread
Equipment
- 1 Small mixing bowl
- 1 10-12 oz Mug
Ingredients
- 1 Ripe banana, mashed
- 1 tbsp Coconut oil, melted or neutral oil of your choice
- 1 tbsp Pure maple syrup
- 1 Egg
- 1 tsp Pure vanilla extract
- 1/4 C Flour, all-purpose or gluten free 1:1
- 1/2 tsp Baking soda
- 1/4 tsp Cinnamon
- 1/4 tsp Salt
- 1/4 C Chocolate chunks or chips, I used Enjoy Life Brand which is dairy free
Instructions
- In a mixing bowl combine the banana, egg, vanilla, maple syrup, cinnamon and salt.
- Add the flour and baking soda and mix until combined
- Fold in the chocolate chips
- Microwave for 1 minute and 30 seconds and check to see if the cake is ready. if not add 30 seconds at a time until completely cooked.
- Let the sake sit for a minute too cool down before eating



Can you use almond flour instead?
