2 Minute Pumpkin Protein Cake

Ingredients: Makes 1 serving
3 tbsp all purpose or self rising flour
1-2 tbsp protein powder* optional
1/2 tsp baking powder
1/2 tsp cinnamon
1-2 tbsp coconut sugar, granulated sugar or maple syrup
1/8 tsp salt
1 egg
1/2 tsp vanilla
1/4 C pumpkin puree
1 tbsp applesauce or coconut oil
2 tbsp chocolate chips
Directions:
1. Mix all of the dry ingredients together
2. Add all the wet ingredients to the dry and mix well. Add the chocolate chips last
3. Pour into a microwave safe ramekin
4. Microwave for two minutes
+Optional: top with whipped cream or yogurt
