2 Minute Single Serve Berry Crumble Mug Cup • Dairy & Gluten Free

Filling:

1/2 C Frozen berries

1 tsp pure maple syrup

1/2 tsp arrowroot powder or tapioca starch or corn starch

*If you want extra protein you can add 2 tsp protein powder or collagen powder to the berry mixture

Crumble top:

2 tbsp rolled oats

2 tbsp GF 1:1 Flour or all-purpose flour

1 tsp pure maple syrup

2 tbsp milk of your choice

1/2 tsp baking powder

Optional: Coconut whipped cream would be amazing on top and I was so bummed when I made this tonight and didn’t have any. I hope you do!

Directions:

  1. In a microwave safe bowl or cup add your berries, maple syrup and starch. Mix and microwave for 45 seconds
  2. In a small bowl mix the oats, flour, baking powder, maple syrup and milk
  3. Spoon the mixture on top of the berries as evenly as possible
  4. Microwave for 1-1.5 minutes
  5. Let cool 1-2 minutes for eating the berries will be very hot!
