Baked French Toast• Dairy free, Egg free, higher protein option!

I’ve included a few substitution options here to fit your needs. Please read the notes so you can pick the one best for you!

Ingredients:

1 loaf of bread, I used homemade bread (you can gluten free bread if it contains tapioca starch or eggs, the others seems to fall apart and not crisp)

2 C “Milk” Here are the options that work for this recipe: Oat milk, almond milk, Ripple or Owyn vanilla protein shakes for extra protein (note these are pea protein based) or regular cows milk if you’re not dairy free

3 tbsp cornstarch or ground flaxseed or chia seeds

1 tbsp ground cinnamon

1 tbsp vanilla extract

1 tsp salt

Optional toppings: Fruit, maple syrup, powdered sugar, coconut whipped cream, nuts

Directions:

1. Preheat your oven to 350F

2. In a mixing bowl combine the milk, vanilla, cinnamon and cornstarch in a bowl and set aside to thicken for 5 minutes.

3. Chop your bread into 1” squares and pour them in a 12 x 12 casserole dish. Pour the liquid mixture over the top. Mix to make sure all of the bread is saturate and mix. Allow it to sit for 10 minutes to soak up the fluid.

4. Bake for 30-40 minutes until the bread on top is golden brown and the there’s no more liquid in the bottom.

5. Add your toppings and serve!
