Creamy Orzo & Beef

Ingredients: Makes 4-6 servings
1lb ground sirloin, ground beef or ground turkey
1 C Orzo, Jovial brand makes a gluten free cassava version or banza makes a chickpea version that has extra protein and fiber
1 1/2 C broth
1 C Marinara sauce (I use Rao’s)
1 onion, diced
1 clove garlic, minced
1 C oat milk or coconut milk
2 C spinach
1 tsp italian seasoning
**If you want to increase your vegetable intake red bell pepper goes well with this. You can dice 1 whole pepper and add it in with the onions.
Directions:
1. In a skillet brown the meat until it’s fully cooked about 6 minutes. Drain any excess fat
2. Add the onions and allow them to soften for about 5 minutes. Stirring occasionally to avoid sticking
3. Add the italian seasoning, garlic and orzo and cook for 1 minute
4. Add the sauce, broth and milk or cream. Bring to a boil and allow to simmer uncovered for 8 minutes stirring frequently so the orzo doesn’t stick. After the 8 minutes put the lid on for 2-3 minutes.
5. Add the spinach and removed the pan from the heat. Stir well. Put the cover back on and allow the spinach to wilt for about 3 minutes.
