Key Lime Pie Bites

•Dairy free, Gluten free, Nut free•

Ingredients: Makes 12, Serving size is 3

For crust:
1 1/2C protein coconut cereal flakes, gluten free (or graham cracker)
1 tbsp granola butter or seed or nut butter if not allergic
2 tbsp vegan butter or coconut oil (melted)

For filling:
1 C vegan cream cheese or dairy free greek yogurt
Juice of 2 limes
1 tsp matcha powder (this is for color you can omit)

Toppings:
Coconut whipped cream (or oat whipped cream)
Zest from 1 lime

Directions:
1. In a food processor blend your cereal flakes. Pour them into a mixing bowl and add the granola butter and vegan butter. Mix well until completely combined

2. Push about 1 tbsp of the crust mix into each ice cube tray.

3. In a food processor combine the filling ingredients until they form a uniformly colored pudding

4. Add two tablespoons (or until the ice cube tray is full) into each well of the tray.

5. Add a dollop of coconut whipped cream to each well and sprinkle lime zest on top of each one

6. Freeze for at least 3 hours before serving. Allow the bites to sit for about 10 minutes before serving
