Gluten and Dairy Free Sausage & Orzo Soup
Equipment
- 1 Dutch oven
Ingredients
- 2 lbs Italian sausage of your choice or 1/2 sausage and 1/2 ground beef to lower the cost
- 1 tbsp Olive oil
- 1/2 Yellow onion, diced
- 3 Stalks Celery
- 3 Carrots
- 2 Cloves Garlic
- 3/4 C Orzo, I used Jovial rice based orzo which is gluten free But any orzo or small pasta will work
- 6 C Low sodium chicken broth I use Kitchen Basics
- 1 tsp Italian Seasoning Dried
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 1 Bunch Spinach About 2 C fresh spinach
- 2 tbsp Fresh parsley, minced Optional, for topping
- Parmesan cheese Optional, for topping
Instructions
- Roll the ground sausage meat into small balls about 1' in diameter
- Heat the olive oil in the dutch oven and add the sausage balls. Simmer until browned and cooked through, about 10 minutes. Be sure to stir them so all sides cook
- Add the onion, garlic, carrots, celery, salt, pepper and Italian seasoning. Mix well and cook about 5 minutes until the veggies are tender
- Add the orzo and broth. Bring to a boil and cook for 10 minutes
- Add the fresh spinach and stir until wilted. Then remove the soup from the heat. Do a taste test to see if the salt and pepper are to your liking
- Optional: Serve with fresh parsley on top or Parmesan cheese
