Healthy Apple Pie Bars – Vegan + Gluten-Free Dessert Recipe

Ingredients:
Filling:
8 medium apple, honeycrisp or granny smith work best, peeled, cored and thinly slices
1/3 C coconut sugar or granulated sugar
2/3 C water
3/4 tsp ground cinnamon
1/8 tsp salt
1 tbsp arrow root starch, tapioca starch or corn starch
Crust & Topping:
3 C Blanched almond flour or oat flour
2 tbsp arrow root powder, tapioca starch or corn starch
1/4 tsp baking soda
1/8 tsp salt
1/2 C coconut oil
1/4 C pure maple syrup
Directions:
- On medium heat, cook the apples, sugar, water, cinnamon, cinnamo and salt for 10 minutes on a low boil.
- Stir in the arrow root powder and cook another 10 minutes
- Pre heat oven to 350F. Line an 8×8 pan with parchment paper
- Prepare the crust by combining all the ingredients until a dough is formed. Set aside 3/4 C of the dough for the topping
- Use the rest of the dough to form a crust on the bottom of the pan that’s even and firmly pressed down. Using a fork poke holes every 1”
- Bake the crust for 10 minutes
- Remover the crust from the oven. Add the apple filling and sprinkle the rest of the crust mixture over the top.
- Bake 20-25 minutes until the top is gold brown on the edges
- Let cool 20 minutes before slicing. **If you want them to be perfect squares put them in the refrigerator for 3 hours and then cut them. You can reheat them after cutting if you want them to be warm
