Honey Ranch Chicken Thighs – Dairy & Gluten Free

Servings: 4 (about 4–6 bone-in, skin-on thighs)

Ingredients

4–6 bone-in, skin-on chicken thighs

3 green onions, chopped

¼ cup fresh parsley leaves

¼ cup fresh cilantro leaves

2 Tbsp fresh dill (or 1 Tbsp dried)

1 tsp garlic powder

1 tsp onion powder

Juice of 1/2 lime

2½ Tbsp honey (or hot honey if you like spicy)

1½ tsp sea salt

½ tsp black pepper

Directions:

  1. Preheat oven to 400F. Line a baking sheet with parchment paper
  2. In a small bowl mix the honey, lime, herbs, garlic powder, onion powder, salt and pepper
  3. Place the chicken on the baking sheet. Drizzle 1/4 of the honey mixture on each thigh.
  4. Roast for about 35-40 minutes or until cooked through and internal temp is 165F
