One Pot Creamy Sausage & Rigatoni with Broccoli rabe

•Ready in under 30 minutes
Ingredients: Makes 4-6 servings
1lb ground Italian sausage
8oz of Banza rigatoni uncooked, or pasta of your choice
1 bunch broccoli rabe chopped or spinach
1 1/2 C Chicken broth
1 C Marinara sauce (I used Rao’s)
1 C Oat milk (I use Pacific brand)
2 tbsp olive oil
Salt + pepper
Directions:
1. In a large skillet or dutch oven heat your olive oil over medium-high heat and add the sausage. Break it up so it crumbles and cook about 5 minutes until lightly browned and cooked through
2. Add the broccoli rabe to the skillet and mix well. Cook for about 3-5 minutes until the leaves have wilted
3. Add the pasta, broth, oat milk and marinara sauce. Mix well and bring to a boil. Once boiling lower heat slightly and cover.
4. Allow the mixture to simmer for amount 10 minutes until the pasta is al dente. Stir every few minutes so the pasta cooked evenly and doesn’t stick.
5. Add salt and pepper to taste. Serve!
