Gut Health Reset Salad- Post antibiotics

Ingredients: Makes 2 servings

2 large carrots, peeled into ribbons

4–5 mini bell peppers, thinly sliced

4 mini cucumbers, sliced into coins or half-moons

½ cup Cleveland Kimchi (or other raw probiotic kimchi)

2 Tbsp water

Directions

Dressing (Kimchi Purée)

In a blender, combine the kimchi and water. Blend until smooth, creating a probiotic-rich, tangy dressing. *add 1 tbsp of water at a time until you get the desired consistency

In a large bowl add all the veggies. Pour the dressing on top and mix well. Serve immediately
