🌿 Health Benefits
Kimchi (fermented veggies): Provides probiotics to help repopulate beneficial gut bacteria after antibiotic use, supporting digestion, immunity, and mood regulation.
Carrot ribbons: Rich in beta-carotene (vitamin A precursor) to repair and nourish gut lining, plus fiber for healthy elimination.
Mini bell peppers: Packed with vitamin C to reduce inflammation and support immune defense while the gut microbiome rebuilds.
Mini cucumbers: Hydrating, mineral-rich, and soothing to the digestive tract; contain silica to support tissue repair.
This salad is designed as a reset meal post-antibiotics: the fiber acts as prebiotics, the kimchi brings probiotics, and the antioxidants/minerals calm inflammation and strengthen gut resilience.
