Marry Me Meatballs

Ingredients:
1lb ground turkey
4 Cloves garlic, minced
1 tsp Italian seasoning
1/2 tsp crushed red pepper flakes
Salt + Pepper
1/2 C fresh parsley
2 tbsp olive oil
1 tbsp butter, vegan
1 onion, diced
1/3 C Vegetable or chicken broth
5 oz Sundried tomatoes in oil, oil drained
1 3/4 C coconut cream (full fat) if you have a coconut allergy you can use another vegan milk with 1 tsp corn starch
3 C fresh spinach
5 tbsp Marinara sauce
Directions:
1. In a large mixing bowl prepare the meatballs by combining turkey, 2 cloves garlic, italian seasoning, red pepper, parsley, salt and pepper.
2. In a large skillet heat 1 tbsp butter and 1 tbsp olive oil. Cook the meatballs about 8 minutes until browned on all sides and cooked through. Move the meatballs to another plate
3. In the same pan add 1 tbsp butter and 1 tbsp olive oil. Add the garlic and onion and let cook for 1 minute. Add the sundried tomatoes and cook 3 minutes. Add the broth and bring to a boil.
4. Lower the heat and add the cream, meatballs, marinara sauce and spinach. Cover and let simmer for about 5 minutes until the spinach is wilted.
*Serve over cauliflower rice for low carb or chickpea pasta for more protein
