Meal Prep! Bbq Chicken Edition

To make 4 meal preps:
1 Rotisserie chicken shredded or 3 breasts of chicken shredded
6 tbsp BBq sauce
1 Package coleslaw mix
1/2 C Vegan mayo
3-4 Roasted sweet potatoes, diced
2 C Pickles I use Grillo’s pickles they’re my favorite!
In a small mixing bowl mix the chicken with bbq sauce and spoon into the containers
In another bowl mix the the mayo with coleslaw mix and divide into the containers.
To roast sweet potatoes wash and dice them into cubes. Lay they flat on a sheet pan with 2 tbsp olive oil, salt and pepper and roast them for about 40 minutes until lightly browned
Pickles and coleslaw are great for gut health, potatoes are full of vitamins, minerals and fiber and chicken has healthy fat and protein.
