Gut Healthy Cosmic Brownies
Equipment
- 1 8×8 Pan
- Parchment paper (optional but easier for clean up)
- 3 Mixing bowls
Ingredients
Brownies
- 1 3/4 C Oat flour, gluten free Almond flour won't work as a substitute
- 1/2 C Unsweetened cocoa powder
- 1 tsp Baking powder
- 1/2 tsp Salt
- 2 Eggs Or flax eggs
- 1/2 C Pure maple syrup
- 1/4 C Coconut sugar
- 1/4 C Avocado oil
- 1/4 C Dairy free yogurt (or unsweetened appleasauce) I used coconut based Cocojune yogurt for the healthiest option, you can also use almond based
- 1 tsp Pure vanilla extract
- 1/2 C Dairy free milk of your choice
- 1 scoop Collagen peptides
Chocolate Icing
- 1 C Thick, dairy-free Greek style yogurt- I used Cocojune
- 1/4 C Cocoa powder
- 3 tbsp Pure maple syrup
- 2 oz Melted dark chocolate
Sprinkles
- 3 tbsp Dye-free, dairy free dark chocolate candy coated chips
Instructions
- Pre heat oven to 350F. Line an 8×8 pan with parchment paper for easy clean up
- In a large mixing bowl combine the oat flour, cocoa powder, baking powder and salt.
- In a second bowl combine the eggs, maple syrup, sugar, oil, yogurt and milk
- Pour the wet ingredients into the dry and mix well
- Spread the mixture evenly in the pan. Bake for 22-26 minutes, until a tooth pick comes out of the center clean
- When the brownies are done immediately transfer them to a cool rack, taking the out of the pan using the parchment paper. This help them cool down much quicker
- Make the icing by combining the yogurt, cocoa powder, melted chocolate and maple syrup. Refrigerate the mixture until ready to ice the brownies. After icing the brownies sprinkles the dye-free chocolate chips on top
