Single Serve Protein Cinnamon Roll
Equipment
- 1 7oz ramekin
Ingredients
Dry Ingredients
- 3 tbsp Oat flour
- 1 tbsp Tapioca flour or corn starch
- 1/2 Scoop Protein powder or collagen
- 1 tsp Coconut sugar
- 1 tsp Prebiotic fiber, I used Sunwarrior brand
- 1 Pinch Baking soda
- 1/2 tsp Cinnamon
- 1 pinch Salt
Wet Ingredients
- 1 egg white or 2 tbsp liquid egg whites
- 2 tbsp yogurt f your choice, I used dairy free coconut based, thick greek style
- 3 tbsp Milk of your choice
- 1/2 tsp Pure vanilla extract
- 1/2 tsp Apple cider vinegar
Cinnamon swirl
- 1 tsp Date syrup to make the swirl
- 1 Small pinch cinnamon on top
Optional icing
- 1 tbsp Powdered sugar
- 1 tsp Water
Instructions
- Combine all the dry ingredients in a 7oz ramekin.
- Add the wet ingredient and stir well
- Use the date syrup to make a swirl on top. Sprinkle cinnamon
- Microwave for about 1 minute or until set
- Optional topping: I used powdered sugar mixed with water to make an icing for the top. The cake is very good without this.



Can you use almond flour or gf AP flour instead, and omit the coconut sugar and fiber without subbing anything else?
