Single Serve Protein Cinnamon Roll

Equipment

  • 1 7oz ramekin

Ingredients

Dry Ingredients

  • 3 tbsp Oat flour
  • 1 tbsp Tapioca flour or corn starch
  • 1/2 Scoop Protein powder or collagen
  • 1 tsp Coconut sugar
  • 1 tsp Prebiotic fiber, I used Sunwarrior brand
  • 1 Pinch Baking soda
  • 1/2 tsp Cinnamon
  • 1 pinch Salt

Wet Ingredients

  • 1 egg white or 2 tbsp liquid egg whites
  • 2 tbsp yogurt f your choice, I used dairy free coconut based, thick greek style
  • 3 tbsp Milk of your choice
  • 1/2 tsp Pure vanilla extract
  • 1/2 tsp Apple cider vinegar

Cinnamon swirl

  • 1 tsp Date syrup to make the swirl
  • 1 Small pinch cinnamon on top

Optional icing

  • 1 tbsp Powdered sugar
  • 1 tsp Water

Instructions

  • Combine all the dry ingredients in a 7oz ramekin.
  • Add the wet ingredient and stir well
  • Use the date syrup to make a swirl on top. Sprinkle cinnamon
  • Microwave for about 1 minute or until set
  • Optional topping: I used powdered sugar mixed with water to make an icing for the top. The cake is very good without this.
