Pineapple key lime pie tarts- Dairy free!

PINEAPPLE KEY LIME PIE TARTS: I’ve partnered with @DoleSunshine to bring you a light and delicious dessert. This is a tropical twist on a classic that your family will love! Best of all no baking required!
Recipe:
1/2 C Key lime juice
2 Cans of Dole Tropical Gold Chunks and extra for garnish
1 lime zest
1 13.5oz can of coconut milk
1/2 C condensed coconut milk
5 tbsp arrowroot or corn starch
1 9oz tub of Coconut whipped cream.
1 10-inch pre-made graham cracker crust
4 tbsp vegan butter
Directions:
Prepare two mixing bowls. In one prepare the crust by combining the butter and graham cracker.
In the second bowl prepare the pie filling by combining the coconut milk, condensed coconut milk, key lime juice and cornstarch. Heat them in a saucepan until it begins to thicken.
Drain the pineapple juice. In a food processor puree the Dole pineapple until smooth.
In small ramekins or pie plates press the crust mixture down to make an even crust. Layer with the pineapple and coconut mixture. Top with coconut whipped cream and garnish with pineapple.
Refrigerate the dessert overnight for best texture before serving.
