Protein Oatmeal Raisin Cookies

These cookies are top 9 allergen free and about 14g of protein each
Ingredients: Makes 9
1 C Rolled oats, gluten free I use Trader Joe’s brand
1 C Oat flour, gluten free (you can grind the rolled oats in a blender until a flour forms)
1/3 C + 2 tbsp protein powder (I use Ritual Brand)
1/2 tsp Cinnamon
1/4 C Granola butter or nut butter of your choice
1/3 C Maple syrup or honey
1/3 C Smashed banana
1/4 C Avocado oil or coconut oil
1/2 C Raisins
1/2 tsp vanilla extract
Directions:
1. Preheat oven to 350F
2. Mix all the ingredients together except the raisins until a sticky dough forms.
3. Fold in the raisins
4. Dived the dough into 9 balls. Put them in the baking tray and flatten them out.
5. Bake 17-20 minutes
*Store in refrigerator for 4 days or air tight cookie jar


I don’t eat nuts or nut butter. What can I use in this and other recipes?
