Anti-inflammatory Mediterranean Cowboy Caviar

Ingredients: Make 6-8 servings
1 15oz can Chickpea, drained and rinsed
1 15oz can Cannellini beans, drained and rinsed
1 C cucumber, diced
1 C cheery tomatoes, quartered
1/2 C kalamata olives
1/2 C red bell pepper or roasted red pepper, diced
1/4 C red onion
1/4 C sundired toamtoes in oil
1/4 C fresh italian parsley, minced
*optional: 1/2 C feta or dairy free feta

Dressing:
1/4 C extra virign olive oil
2 tbsp red wine vinegar
1 tsp dried italian seasoning
1/2 tsp salt
1/4 tsp black pepper

Serve with crackers or eat alone. These Crunchmaster crackers are dairy and gluten free but do contain sesame seeds

Directions:

  1. Mix the dressing ingredients together and set aside
  2. Combine all the caviar ingredients in a large bowl until mixed well. Pour the dressing over the top and toss when ready to serve.

*Lasts 4 days refrigerated
