Rainbow Dumpling Bowl

Healthy dinner in 15 minutes! Veggies are full of fiber and prebiotics which are essential to feed your healthy gut bacteria. The goal is to eat 30 different plans per week for an optimal gut. This one dish includes 9 different plants!

Ingredients dumplings/wontons:
*This will vary by the brand you choose
Dumplings-If you can’t find fresh dumplings, Trader Joe’s Cilantro dumplings are a good choice their only downside is the sodium and that their dumpling wrapper is processed. The rest of the ingredients are good!
Vegetable oil

Ingredients for salad: Makes 4 servings
2 C Edamame
2 C Quinoa, you can use the microwave version for speed
2 Bell peppers, color of your choice, julienne
1/2 C Cilantro, fresh & chopped
3 green onions, sliced thin
2 C Purple cabbage
1 C matchstick carrots
1/2 english cucumber, julienne

**Optional toppings: sesame seeds, more green onion, more fresh cilantro, lime

Ingredients for dressing:
3 tbsp fresh ginger
1/2 shallot
1/4 C white miso paste
2 tbsp honey
1 tbsp rice wine vinegar
1 clove garlic
1/3 C vegetable oil ( avocado or olive oil work well)

Directions:
1. Prepare the dumplings as directed on the package
2. While they’re cooking diced all your vegetables and prepare the salad in a large mixing bowl
3. Make the dressing by blending all the ingredients in a food processor until smooth. Pour the dressing over the chopped veggies and mix well. (you can use as much dressing as you like and put the rest on the side. I used two tablespoons on the salad and put the rest on the side)
