Anti-Inflammatory Sheet Pan Gnocchi

Ingredients: Makes 4 servings
1lb ground turkey mixed with 1 tbsp italian seasoning and 1/4 tsp salt rolled into small meatballs
5oz Fresh spinach
2 tbsp Olive oil
1 17.5 oz Shelf stable gnocchi (potato only and gluten free)
4oz Sundried tomatoes, julienne
Salt + Pepper
Directions:
1. Preheat oven to 400F. Line a sheet pan with parchment paper
2. Spread the gnocchi across the pan. Roll the ground turkey into balls and spread across the pan. Each ball should be about 1 tbsp of meat (smaller than a standard meatball)
3. Add the sundried tomatoes, olive oil and sprinkle salt and pepper. Bake for 20 minutes.
4. Spread the spinach on top and pop back in the oven for 3-5 minutes until the spinach is wilted.
5. Remove from the oven, mix well and serve!
