Strawberry Peach Crumble Bars


Blueberry Peach Crumble Bars
Equipment
- 1 8×8 Pan
- Parchment paper
- 1 Mixing bowl
- 1 Saucepan
Ingredients
Base & Crumble topping
- 1 1/2 C Oat Flour
- 1/2 C Rolled Oats
- 1/3 C Unflavored, Collagen peptides
- 1/4 C Coconut sugar
- 1/3 C Melted coconut oil
- 2-4 tbsp Dairy free milk of your choice
- 1 tsp Cinnamon
- 1/2 tsp Pure vanilla extract
- 1 pinch Salt
Filling
- 1 C Blueberries
- 1 C Peaches, diced
- 2 tbsp Pure maple syrup
- 1 tbsp Chia seeds
- 1 tbsp Lemon juice
- 1/2 tsp Cinnamon
- 1 tsp Arrowroot starch or corn starch
Instructions
- Pre heat oven to 350F. Line an 8×8 pan with parchment paper
- In a sauce pan heat the peaches and blueberries for 5-7 minutes. Add the chia seeds and let thicken about 3-5 minutes. Set aside and let cool
- In a mixing bowl make the crumble
- Using 2/3 of the crumble mixture make the base of the bars in the pan pressing down the dough to make an even layer
- Pour the fruit on top
- Crumble the remaining dough over the top
- Bake for 25-30 minutes. Allow to cool completely before cutting
