Blueberry Peach Crumble Bars

Equipment

  • 1 8×8 Pan
  • Parchment paper
  • 1 Mixing bowl
  • 1 Saucepan

Ingredients

Base & Crumble topping

  • 1 1/2 C Oat Flour
  • 1/2 C Rolled Oats
  • 1/3 C Unflavored, Collagen peptides
  • 1/4 C Coconut sugar
  • 1/3 C Melted coconut oil
  • 2-4 tbsp Dairy free milk of your choice
  • 1 tsp Cinnamon
  • 1/2 tsp Pure vanilla extract
  • 1 pinch Salt

Filling

  • 1 C Blueberries
  • 1 C Peaches, diced
  • 2 tbsp Pure maple syrup
  • 1 tbsp Chia seeds
  • 1 tbsp Lemon juice
  • 1/2 tsp Cinnamon
  • 1 tsp Arrowroot starch or corn starch

Instructions

  • Pre heat oven to 350F. Line an 8×8 pan with parchment paper
  • In a sauce pan heat the peaches and blueberries for 5-7 minutes. Add the chia seeds and let thicken about 3-5 minutes. Set aside and let cool
  • In a mixing bowl make the crumble
  • Using 2/3 of the crumble mixture make the base of the bars in the pan pressing down the dough to make an even layer
  • Pour the fruit on top
  • Crumble the remaining dough over the top
  • Bake for 25-30 minutes. Allow to cool completely before cutting
