Turkey Teriyaki

Ingredients: Makes 4 servings
1lb ground turkey
1 C Broccoli florets chopped small
1 C shredded carrots
1 small onion
2 cloves garlic, minced
1 tbsp olive oil
1 tsp salt
1/4 C Water
*Optional: rice and green onions for serving
Sauce:
1/3 C Tamari or soy sauce
2 tbsp honey
2 tsp Olive oil or avocado oil
1 tsp garlic powder
1 tsp fresh grated ginger
1 tbsp cornstarch or arrowroot powder
Directions:
1. In a small bowl whisk all the sauce ingredients together and let them sit to thicken
2. In a skillet heat 1 tbsp olive oil and the onion for 2-3 minutes until transparent. Add the garlic and cook for 1 minute. Then add the turkey and salt. Cook for about 5-7 minutes until the turkey is mostly cooked
3. Add the carrots, broccoli and water and cover for 5 minutes. Mixing occasionally
4. Remove the cover and allow to simmer until the water has evaporated.
5. Add the teriyaki sauce and mix well until everything is coated. Simmer about 3-4 minutes until the sauce has thickened and everything is saturated.
Serve warm. I topped with green onion and served with rice but you can also used rice made out of chickpeas for extra protein and fiber or cauliflower rice for less carbs
