Tuscan Chicken & Broccoli

Ingredients: Makes 4 servings

1lb Chicken breast or thighs diced into 1” pieces
2 C Fresh broccoli florets, cut any large pieces
1/2 C Sundried tomatoes
1 C Chicken broth
1 tsp italian seasoning
1 tsp salt
1/2 tsp pepper
3 cloves garlic
2 tbsp olive oil
*Optional: Rice, pasta to serve with it: To keep the time down you can use 90 second rice or pre-cooked pasta

Directions:
1. In a skillet heat the olive oil on medium. Add the chicken, salt, pepper and italian seasoning. Cook until the chicken is completely cooked through and golden brown about 8 minutes.
2. Add the garlic and cook for 1 minute
3. Add the broccoli, sun-dried tomatoes and broth. Mix well and put the cover on for 5 minutes. After removing the top continue to cook until all of the liquid is absorbed and the broccoli is tender (about 2 minutes). Serve with pasta or rice
