Blueberry Lemon Bread

Ingredients:

1 1/2 C flour

1 1/2 tsp baking powder

1/8th tsp salt

1/4 C avocado oil

1/4 C apple sauce

1/2 C granulated sugar (coconut sugar makes the bread dark)

2 eggs

1 tsp vanilla

2 tbsp lemon juice

1 tbsp lemon zest

1/2 C milk of your choice

1 C blueberries

Lemon glaze:

1/2 C powdered sugar

1 tsp+ lemon juice

Lemon zest

Directions:

1. Preheat oven to 350F

2. Combine all the cake ingredients in a mixing bowl except the blueberries until smooth

3. Fold the blueberries in

4. Pour the mixture into a 9×4 loaf pan.

5. sprinkle a few extra blueberries on top

6. Bake for 40-45 minutes (this type of bread doesn’t brown so check it with a toothpick to avoid overcooking)

7. After the loaf cools and you’re ready to serve mix the icing and drizzle on
