Sweet Chili Garlic ‘Butter’ Chicken Legs

These are great for the super bowl or a tasty weekend meal! I like mixing dark meat chicken into our diet because it has a higher iron concentration than white meat and it tends to be tastier.

Ingredients: Makes 6 Legs

1lb Chicken legs

2tbsp Olive oil

1 tsp Paprika

1tsp cayenne pepper

1 tsp salt

1 tsp black pepper

1 tsp Oregano

1 tsp baking powder

1/4 C Flour (I used all purpose flour)

Ingredients for sauce:

1 tbsp plant based butter

2 cloves garlic minced

3 tbsp fresh cilantro,diced

1/2 C Sweet Chili sauce (I used Gramma’s )

1/2 Lemon juiced

Directions:

1. Preheat oven to 400F

2. Coat your chicken legs in olive oil, paprika, cayenne, salt and pepper. Mix until coated

3. Add the baking powder and flour use your hands to coat the legs.

4. Bake for 45 Minutes

5. When the legs are done heat the butter in a pan and add the garlic. Let it simmer for 1 minute.

6. Add the cilantro, chili sauce and lemon juice stir until combined and bubbling.

7. Add the chicken legs and coat them in the sauce. Serve warm
