Equipment

  • 1 Mixing bowl

Ingredients

  • 3 C Rotisserie chicken chopped or chicken breast chopped, cooked
  • 1/2 C Mayo, I used Primal Kitchen Avocado oil based
  • 1/2 C Celery, chopped
  • 1/3 C Dried cranberries, low sugar
  • 1/3 C Dried apricots, chopped
  • 1/4 C Walnuts, chopped (optional)
  • 1-2 tsp Lemon juice
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 1 Tsp Dijon mustard (optional)

What to eat it with

  • Crunchmaster crackers (gluten free & dairy free)
  • Bell pepper boats
  • Celery sticks

Instructions

  • Combine all the ingredients in one large bowl and mix until combined. Refrogerate about 20-30 minutes before serving
  • If your using this for meal prep divide into 4 servings
