Copycat Publix Cransational Chicken Salad
Equipment
- 1 Mixing bowl
Ingredients
- 3 C Rotisserie chicken chopped or chicken breast chopped, cooked
- 1/2 C Mayo, I used Primal Kitchen Avocado oil based
- 1/2 C Celery, chopped
- 1/3 C Dried cranberries, low sugar
- 1/3 C Dried apricots, chopped
- 1/4 C Walnuts, chopped (optional)
- 1-2 tsp Lemon juice
- 1/4 tsp Salt
- 1/4 tsp Black pepper
- 1 Tsp Dijon mustard (optional)
What to eat it with
- Crunchmaster crackers (gluten free & dairy free)
- Bell pepper boats
- Celery sticks
Instructions
- Combine all the ingredients in one large bowl and mix until combined. Refrogerate about 20-30 minutes before serving
- If your using this for meal prep divide into 4 servings
