Gluten Free Gnocchi Sausage and Brussels

Ingredients: Makes 4 servings

1lb ground Italian sausage of your choice

1lb shelf-stable gnocchi, gluten free

3 tbsp extra virgin olive oil

2 cloves garlic, minced

1 tbsp lemon juice

2lb Brussels sprouts, quartered

1/2 tsp salt

Pinch of black pepper

Optional: Crush red pepper

Directions:

  1. In a skillet, cook your sausage 5-7 minutes until no longer pink and completely cooked through. Set the sausage aside on another plate
  2. In the same skillet add 1 tbsp olive oil the gnocchi and cook for about 8 minutes, letting it crisp on each side about 3-4 minutes. Set the gnocchi aside when finished
  3. Add the Brussels sprouts to the same skillet and 1 tbsp olive oil. Cook for about 5-7 minutes until tender and browning (depending on the size of your sprouts this may take a little longer) If the sprouts are large you may need to add a few tbsp of water to steam them as well to soften them up
  4. Add your seasonings to the skillet and stir. Let the seasoning set into the brussels for abut 2-3 min.
  5. Add the sausage and gnocchi back into the pan and heat for a few minutes and serve!
