Gluten Free Gnocchi Sausage and Brussels

Ingredients: Makes 4 servings
1lb ground Italian sausage of your choice
1lb shelf-stable gnocchi, gluten free
3 tbsp extra virgin olive oil
2 cloves garlic, minced
1 tbsp lemon juice
2lb Brussels sprouts, quartered
1/2 tsp salt
Pinch of black pepper
Optional: Crush red pepper
Directions:
- In a skillet, cook your sausage 5-7 minutes until no longer pink and completely cooked through. Set the sausage aside on another plate
- In the same skillet add 1 tbsp olive oil the gnocchi and cook for about 8 minutes, letting it crisp on each side about 3-4 minutes. Set the gnocchi aside when finished
- Add the Brussels sprouts to the same skillet and 1 tbsp olive oil. Cook for about 5-7 minutes until tender and browning (depending on the size of your sprouts this may take a little longer) If the sprouts are large you may need to add a few tbsp of water to steam them as well to soften them up
- Add your seasonings to the skillet and stir. Let the seasoning set into the brussels for abut 2-3 min.
- Add the sausage and gnocchi back into the pan and heat for a few minutes and serve!
