Ingredients

Salad Ingredients

  • 1 can Chickpeas, drained and rinsed. I used Eden Foods brand
  • 1 Ripe avocado, diced
  • 1/2 C Cherry tomatoes, halved
  • 1/4 C Sun-dried tomatoes, chopped
  • 1/4 C Red onion, finely diced
  • 1/4 C Fresh parsley, chopped
  • 1/4 C Fresh basil, torn
  • 2-3 tbsp Pesto or sauce of your choice Optional

Dressing

  • 1-2 tbsp Extra virgin olive oil *If you use pesto you only need to add the lemon juice not the oil
  • 1 Juice of 1/2 lemon
  • 1 Pinch Salt
