Honey Glazed Chicken & Sweets

Equipment

  • 1 Large baking sheet
  • 1 Mixing bowl

Ingredients

Chicken & Veggies

  • 2 lbs Chicken thighs
  • 3 C Diced sweet potato
  • 2 C Broccoli florets
  • 2 tbsp Olive oil

Dry Rub

  • 1 tsp Garlic powder
  • 1 tsp Smoke paprika or regular paprika
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper

Glaze

  • 2 tbsp Honey
  • 1 tbsp Coconut aminos, tamari or low sodium soy sauce
  • 1 tbsp Apple cider vinegar
  • 1/2 tsp Onion powder

Instructions

  • Pre heat oven to 425F. Line a baking sheet with parchment paper for easy clean up
  • Coat the potatoes in 1/2 the dry rub. Coat the chicken in the other half of the dry rub
  • Add the chicken, potatoes and broccoli to the pan. Drizzle 2 tbsp of olive oil other them and massage
  • Bake the tray for 20 minutes
  • In a small mixing bowl prepare the glaze
  • Remove the tray from the oven. Brush the chicken with the honey glaze and bake an additional 10-15 minutes. In the last 2 minutes change the oven to broil to caramelize the glaze. Watch closely, broil works quickly and you don't want to burn your chicken
