One Pan Thai Chili Chicken
Ingredients: Makes 4 servings
1 1/2lbs chicken breast, cubed
1/2 C all purpose flour or gluten free 1:1
1 tsp ground ginger
1 pinch salt and pepper
2 bell peppers
1 medium yellow onion or 2 shallots
3 green onions sliced
4 tbsp olive oil
Sauce ingredients:
1/2 C sweet chili sauce (I used Gramma’s brand)
1/3 C low sodium soy sauce
1/2 C apple juice
1/4 C rice vinegar
1 tbsp ketchup
2 cloves garlic minced
*Optional serve with rice, quinoa or cauliflower rice
Directions:
1. In a small mixing bowl combine all the sauce ingredients and whisk them together and set aside
2. In a mixing bowl combine the flour, salt, pepper and ground ginger. Dredge the chicken through it until coated
2. Heat 2 tbsp of olive oil in a large pan on medium high. Add the chicken and cook until golden brown about 5-7 minutes. Then set the chicken aside on a separate plate
3. In the same pan add two more tbsp of olive oil and all the vegetables. Cook about 7 minutes until the onions are soft and lightly caramelized.
4. Return the chicken to the pan and pour the sauce over top. Allow the mixture to cook for 5-8 minutes until the sauce has thickened
5. Serve with rice or carb of your choice and diced green onions on top
