Sausage, Carrots & Potates

Ingredients: Makes 4 servings
1lb chicken sausage
2-3lbs mini honey gold potatoes, quartered
1 package carrots
1/4 C olive oil
1/2 tbsp dried italian seasoning
1 tsp salt
1/4 tsp black pepper
Directions:
- Preheat oven to 400F
- Line a baking sheet with parchment paper or tin foil.
- Spread the potatoes and carrots on the sheet. Roll the sausage into balls and spread them out. If you need to use two pans that’s ok
- Bake for 30-40 minutes and then check your carrots to see if they’re soft enough for your family. *With younger children you may want to extend baking time to get them even softer
