Vegan & Gluten Free Pound Cake
Ingredients:
2 C all purpose gluten free flour
1 tbsp arrowroot powder or cornstarch
1 tsp baking powder
1/4 tsp salt
3/4 C vegan butter
1 C granulated sugar
1 tbsp vanilla
1 C applesauce
1/3 C milk of your choice
Directions:
1. Preheat oven to 350F. Grease a 9” baking pan or line with parchment paper
2. Whisk together the dry ingredients and set aside
3. In a separate bowl with a hand mixer cream the butter for 2-3 minutes on high. Add the sugar and vanilla and mix until fluffy about 2 minutes.
4. Add the applesauce in slowly while mixing on high until full combined
5. Add in half the flour mix and mix on low. As soon as it’s mixed in stop and add the rest so the same thing. You don’t want to overmix the batter
6. Bake for 40-45 minutes.
7. Cool on a cooling rack to maintain consistency. Cool for at least 1 hour before cutting or allow to cool on the counter top for 40 minutes and refrigerate for 20 minutes before cutting
